Bittner's Eureka Locker has roots going back to 1942 when Gary Robenstein founded the Eureka Locker Service. Scott Bittner purchased it in 1994, and when Scott passed away, his daughter Lori Bittner Warfel took over in 2015. The Bittner family's involvement in meat processing actually started in 1977 when Lori's father Terry established the Chenoa Locker.
In 2005, Bittner's became the only processing facility in Illinois to receive its Organic Processing Certificate.
That means they can handle animals raised organically and legally maintain the organic label through processing. Animals arrive live, get USDA inspected, and leave as certified organic meat. They work directly with local organic pastures—no middlemen, no questions about sourcing.
Custom Processing covers the full range: - Beef: Everything from ribeye and porterhouse steaks to chuck roasts, brisket, ground hamburger, and specialty cuts (heart, liver, tongue, oxtail) - Pork: Bone-in chops, tenderloins, shoulder roasts, ribs, ham, fresh or smoked bacon, pork belly - Lamb & Goat: Chops, racks, shoulder roasts, leg cuts, shanks, ground, offal - Deer Processing: Full-service venison processing
Retail: Stocked with local meat from their partner farmers. They offer bundles and gift options.
Their steaks are aged, hand-trimmed, and graded for marbling. More marbling = more flavor. They market these as premium choice steaks—"Cut Above The Rest."
