Bitterwater Outfitters, run by Clayton Grant, operates guided hunts on ranches just outside Paso Robles—right in the middle of wild pig country, roughly 3.5 hours north of Los Angeles and 2 hours south of San Jose.
Wild California pigs are lean, muscular, and intelligent. An average meat pig weighs 150–180 lbs; trophy boars run 200–300 lbs with tusks sometimes exceeding 3 inches. They move at speeds up to 30 mph with agility through brush and open terrain.
Hunt Details: - 2-day hunts, 2-party minimum - Rifle requirement: .25 caliber minimum (.270, 30-06, 7mm mag preferred), sighted at 200 yards - Spot-and-stalk hunting (no dogs used) - One guide per 3-4 hunters - Guides recover, skin, clean, and split game - Valid hunting license and wild pig validation required - Cost: $1,150 per person ($600 deposit to book) - Note: Hunts operate in the no-lead condor zone

Bitterwater coordinates with local processors. J&R Meats in Paso Robles charges around $95 per pig (3–7 business days), with smoking and sausage options available. They maintain a resource list of California butchers statewide for hunters traveling from out of state.
