Brian Salmons and Drew Hunt founded Hill Country Outfitters on a simple principle: they know whitetail hunting in the Midwest because they've been doing it their whole lives. Brian started at age 7 and has spent two decades honing skills as a food plotter, stand builder, and tracker. Drew has hunted across the country and built a collection of mature bucks—several exceeding 190 and 200 inches—making him one of the most experienced guides in the region.

Hill Country Outfitters offers three hunt types, all professionally guided:

  • 5-day hunt: $3,250
  • 2-day rifle (mid-December): $1,300
  • Requires straight-wall rifle cartridge
  • First 3-4 weeks of season: evening hunts only
  • After 2-day rifle season: evening only
  • 5-day hunt: $3,000
  • 3-day bow: $1,800
  • Compound bow or crossbow only
  • Weeks 1-3: evening hunts only
  • Flexible scheduling after week 4
  • 4-day hunt: $3,250
  • Late season availability

All hunts include guide service, stand placement, and recovery assistance. You provide your own weapon, ammunition, safety harness (REQUIRED for tree stands), and cooling capacity to bring home your harvest. Local processors available.

They don't just hunt their property—they actively improve it. Strategic food plot maintenance and selective timber harvesting create habitat for trophy whitetail. They monitor deer movement patterns continuously and adjust hunter placement based on real-time behavior and seasonal trends. This level of land stewardship isn't common among outfitters.

Your guide meets you before dawn or in late afternoon (prime movement times). You're transported to your designated stand and left to hunt—no constant walking that spooks deer. If you harvest, guides are on standby to help track and recover. Midday breaks are optional; you control your comfort level.

Early season hunts focus on evening activity. As the season progresses into November and December, they shift strategy based on what the deer are actually doing, not calendar dates.
