They don't coat sears, springs, bores, chambers, or other tolerance-critical parts. Pins and pin holes are typically masked to avoid tolerance issues—the ceramic coating adds measurable thickness that can affect fit, especially on tight 1911s.
Markings: Machine-engraved or stamped markings survive the process. Painted or lightly laser-etched markings will be lost unless masked (though masking leaves visible borders). Serial numbers are masked at no extra charge.
